Recommended USDA Internal Temperature
LaLonde’s Market recommends removing meat 5-10 degrees before the desired temperature. Meat will continue to cook after it is removed from its heat source.
Tips for Cooking a Standing Rib Roast
Bake in oven, bone down at 325 degrees. Approximately 15-20 minutes per pound. Using a meat thermometer, inserted into the center of the roast, remove roast 5-10 degrees below desired doneness. Let stand 15-20 minutes before serving.

*Roasts are recommended to be cooked Medium Rare. This allows the ends to be medium and the center to be more rare.
